65% Pinot Noir, 30% Chardonnay, 5% Pinot Meunier.

Rilly la Montagne, Eceuil.
Production method:
Initially, alcoholic fermentation only in temperature-controlled vats followed by malolactic fermentation; subsequently assembled with reserve wines kept in vats at controlled temperatures.
Aging:
Harvest assembly 2016/2017 followed by cellar aging of about 2/3 years.
Dosage:
2 to 3 g / L
Tasting notes:
Eye: slightly darker in colour, which is due to the use of 65% Pinot Noir.
Nose: first clear citrus and apple tones, somewhat yeasty.
Palate: clear intensity and fruitiness, but also some softer tones of honey and brioche; beautifully balanced and elegant, fresh with rounded acids and soft bubble.
Food pairing:
This fine, fruity Champagne is an excellent apéritif all by itself but also combines very well indeed with white meats, pork meat, rich fish, shellfish and light cheese.
